Pecan Pie Mix

Before You Start

From the kit you will require: 5ml measuring spoon, two bags of mix, one bag of pecans and the round foil tray. The bags are labelled Pecan Pie Pastry Mix and Pecan Pie Filling Mix.

In addition you will require: 50g butter (salted or unsalted), 3 medium eggs, rolling pin and a little flour for rolling out pastry.

Instructions

Pre-heat the oven to 160 degrees C before starting.

To make the base:

1. Empty bag of pecan pie pastry mix into mixing bowl.

2. Add 70ml of water (14tsp).

3. Hand knead dough into a ball – this will only take one or two minutes, the pastry should be just smooth.

4. Roll out ball onto a well floured board with rolling pin until pastry is thin and will fill the 9” (22cm) foil case supplied.

5. Line the foil case with pastry pushing the pastry well into the edges. Prick the base of the tray with a fork a few times and trim the top to fit the tray neatly.

To add the filling:

1. Melt 50g of butter in a large bowl.

2. Lightly beat 3 eggs and add them to the melted butter.

3. Add bag of Pecan Pie Filling Mix to the eggs and butter and blend in. Do not worry if you have some sugar lumps in the mix, they will dissolve during cooking.

4. Put the foil tray with the base in it on a baking tray and empty the bag of pecan nuts into the pastry base (save four or five to put on top of the pie).

5. Pour filling over the nuts.

6. Cook in the middle of a pre-heated oven for 40 - 50 minutes until a cold knife comes out almost clean.

7. The pie will rise during cooking and fall whilst cooling.

Can be served hot or cold. Tastes great with ice cream!
